The Subtle Art of not giving a F- Best book ever!

I just read a book that literally changed my life and the way I think.  Let me tell a quick story before I get into the book.  So, I was at one of my favorite places to be Barnes and Noble and I was looking for a book that I would enjoy. Something that will trigger my brain cells.  Besides the bible, I’ve always enjoyed reading a good book.

 I picked up a Carl Webber and TD Jakes book. As I was walking towards the front to grab a seat. I saw an orange cover with black writing. The first thing I saw was not giving a F. I smiled and picked it up. I found a seat thankfully because people like to hog the chairs at Barnes and Noble.  I opened the book and I was captivated.

  Mark Manson is one of the realest authors today. I’m not knocking anyone else but he really set the bar high . This book is basically telling you things happen in our lives good and bad. It’s how we determine to learn from them.  We learn that little things that bother us shouldn’t ruin our day. Either you can give an F and let it ruin your day. Or not give an F and move on.

I haven’t read a good nonfiction book in a long time. This is by far the best book I ever read. To me it’s not a self-help book. It’s a Hey- you- need -to -get -your -shiz -together- and -look -at- the- man/woman -in -the -mirror.  Stop giving an f about what people think about you. Their horrible opinions and advice can make or break you. Learn how to pick and choose your battles. Learn what to give F about. Learn what not to give an F about.  It’s okay to fail. Failure is just a stepping stone to something greater.

Even though the book had nine chapters, it took me about two weeks to finish the book.  I actually made notes and highlighted a few things. I made notes to myself! That’s how good the book is!  If I was 21 years old and I came across this book I think my life would be so different now! But I’m 31 years old and this book came right on time!

I suggest this book for ages 18 and up. Yeah there’s cursing in the book but he’s keeping it real. When you show people that you are real about life and the reality, then you will capture people’s attention. He captured mines and now I’m going to pass it on to you!



Winner, Winner Salmon Dinner!

Salmon and dressing. Corn Casserole. Spinach. Good Sunday eating!


Salmon is one of the easiest foods to cook.  It is one of the few seafood’s that you can eat for breakfast, brunch, lunch or dinner. It can be smoked, grilled, baked or pan fried. You can fry it into a salmon cake too.  I usually buy wild Alaskan salmon because to me it doesn’t have a fishy taste to it.

 Along with that was saute spinach, dressing (stuffing some people like to say) and corn casserole. My mom is a whiz at making dressing so she prepared that. (I’m not on that level yet but I did help prep) She also cooked the corn casserole.   This was the best meals I’ve had in a while.

Everything was cooked from scratch and fresh herbs and spices were used.   It was also budget friendly too.  So, if you want to impress family and friends or you just want to test your cooking skills then try making this. Happy Eating!


2 boxes of Jiffy cornbread

2 stalks of celery

½ of bell pepper

3 stalks of green onion

1 box of chicken broth (you can use veggie broth but I recommend chicken)

2 large eggs

Milk (She used lactose free milk because my stomach doesn’t do too well with regular milk)

1 -2 sticks of butter




Secret ingredients that makes dressing taste better

Pre heat your oven to 350 degrees.

Chop all of the vegetables into to small pieces. Take a small pan and heat it up medium/low heat. With the stick of butter cut two tablespoons put in pan. As it melts add veggies stir and let them cook until soft. Cut two more tablespoons of butter and put it in a baking dish or cast iron skillet. Put it in the oven until butter melts. Meanwhile, combine jiffy boxes, eggs, and milk into bowl and stir until smooth.  Take the melted butter and pour into corn bread mixture stir it in. Then, pour back into the baking dish. Bake the corn bread according to directions of the box. Once cornbread is baked sit it on cool rack and let it cool.  After it’s cooled combine veggies and corn bread together in a bowl. Add chicken broth in slowly as you stir. Add spices to your liking.

Side note: Make sure you taste your dressing to see if anything is missing. If you need to add more sage do so. If it’s too dry add more broth. Make sure it’s moist but not soggy. Soggy dressing is a no-no. Spoon out and put dressing evenly around the Salmon

Now onto the Salmon.

I usually buy my salmon fresh from HEB.  I get to see what kind to choose and you know that it’s fresh. If you can’t afford fresh Salmon then frozen is good too. Just make sure it doesn’t smell fishy. If odor is over powering then it’s not good.   I usually pay a good amount of money for it. Seafood is expensive in general.

Salmon –I paid a $20 for a big filet.

1 lemon

1 table spoon of butter

Season salt

Garlic powder



2 table spoons of EVOO (extra virgin olive oil)

Parsley flakes for decoration

Rinse the salmon thoroughly and then let water drain from it. Rub two table spoons of EVOO on whole salmon.  Season it to your liking.  Cover another baking dish with foil and spray then place in baking dish. Slice lemon in half. One half squeeze juice of lemon all over. Slice other half place them on top. Cut the butter and place it on Salmon. Then sprinkle parsley on top. After you spoon dressing around salmon cover with foil. Bake at 350 for 25 minutes or when salmon is cooked.

 Corn Casserole

1 (15 1/4-ounce) can whole kernel corn, drained

1 (14 3/4-ounce) can cream-style corn

1 (8-ounce) package corn muffin mix (recommended: Jiffy)

1 cup sour cream

1/2 stick butter, melted

1 to 1 1/2 cups mild shredded cheddar

Your oven should stay on 350 degrees

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Last but not least sauté spinach.

Wash the spinach thoroughly to make sure there are is no grain or bugs in it. You can sprinkle salt to pull it out.  Chop garlic into small pieces.  Take a pan and heat it to medium heat. Add EVOO and garlic. Stir the garlic in. Add spinach and let it cook 5 minutes or until it is cooked to your liking.  It should be a vibrant green color to it.

There you have it a wonderful semi-healthy meal. There are lots of ways you can make this. Make it how you would like to make it. Remember good food is good living!






Fried rice anyone?

My result! Shrimp Fried Rice Yummy

We all know that the struggle has been real lately and when you’re on a friendly budget ;eating out starts to add up and puts a big hole in your bank account.  A few years back I decided that even though I LOVE to eat out  I need to start LOVING to cook at home.  I found out that I’m not such a bad cook after all. There are great reasons that you should cook at home.

A. It’s much cheaper.

B. You know who’s been cooking your food if it turns out crappy.

C. You don’t have to worry about tipping someone.

Fried rice is the first thing I learned how to cook from scratch. It was easy and quick to make. So if you’re on the go all of the time and you don’t have time to cook a full meal; fried rice is the perfect recipe for you.  I love shrimp so I usually make shrimp fried rice . You can make chicken, beef or pork if you like.  There are meats out there that are pre- packaged for you so you can buy those.  I do suggest to buy and marinate you meat . The out come will be delicious.  Now for my veggie and vegan people;you can just use vegetables only or add tofu to your rice. Whatever makes you happy!

Here’s my recipe for Shrimp fried rice.

Shrimp- $5.98 ( it’s going to be the most expensive to buy I brought medium sized bag peeled and de-veined )

Brown or White rice- $1.89 for a large bag

Soy Sauce $1.50  (whatever brand you want to choose. I use Kikkoman)

Ginger root- $ 2.00

Green onion- $1.50


Fried rice seasoing – .98

seasoning to add flavor to the shrimp.

The first thing you want to do is boil the rice.  Make sure there’s enough water because you’re going to be stir-frying the rice.  The last thing you want is crunchy rice, it’s not good trust me.  I usually follow the directions but I add 1/2 cup extra water.  So 1 cup of rice and 2 1/2 cups of water.  While you’re waiting for the rice to boil start chopping the ginger, green onion, and garlic.  I don’t measure how much I chop. Chop as much you like just make sure  it won’t overpower the taste.

After I boil the rice I put it to the side.  I don’t have a wok so I use a cast iron skillet I think it works just as well.   Oil the skillet with extra virgin olive oil. Let it heat up and cook the green onion, garlic and ginger. When the green onion turns bright green scoop them out along with the garlic and ginger and sit that on the side.   On to the Shrimp.

So, I let the shrimp thaw out overnight. If you don’t have time do that  just run the shrimp under cold water until it’s thawed out. Let it drain and add any seasoning to it.  Cook the shrimp in batches and add soy sauce as you go along. After you cook everything sit that on the side as well.

Side note: Make sure you clean up as you go. You won’t have much to clean after your meal.

Oil the skillet and make sure it’s hot. Add the rice and vegetables and stir quickly. Add a little more soy sauce and the fried rice powder.  Finally, add the shrimp. Stir it in and Wallah! The  meal is ready!  I like to add a little brown sugar to cut the salt.  You can add whatever you like to make it taste better.

There you have it.  A go to dinner during the week and it will last for a couple of days if you don’t eat it all.





Would you date yourself ?

“Would you date yourself”? I read out loud when I scrolled to a particular Facebook post.  That really made me pick my brain and wonder; if I was guy let’s say his name is Charles, would I want to date Charmaine Raquel Hudson?  I thought in Charles’s smooth deep voice “Yeah I would. She’s pretty, funny, and just perfect”!  I scrolled to the next post and moved on.

Later on the night, I had a not so pleasant dream about a guy I was trying to date.  He wasn’t feeling me at all!  I was trying to do everything to get him to like me and it wouldn’t work.  I woke up disturbed.  I was trying to figure out what did that dream mean?  I’m not a bad person.  I’m actually really nice. The few guys that I have dated  all turned out to be jerks.   I did my best to get these guys to like me. Was I the problem?  Was I too mean towards ole dude from the gym?  The guy before that I use to literally chauffeur around because he got into a horrible car accident.  He lost his job and he just fell on bad times.  I liked him at first but he ended up being  jack ass of the century.    You know the usual that people go through.

I decided that I was going to make a list about myself.  I had the Pros and Cons of Charmaine Raquel Hudson: Date able or Nah?

Here are the Pros:drum roll!

  1. I love Jesus!
  2. Loyal
  3. Happy about 90% of the time
  4. Nice to a certain extent (don’t take advantage of me)
  5. Fun
  6. Open to new things (adventurous to a certain extent don’t go crazy on me like mountain climbing or bungee jumping  not cool!)
  7. I LOVE to EAT! (love trying new foods, don’t have me try crazy things that’s going to possibly kill us)
  8. Responsible (took a while tho!)
  9. Respectful
  10. Love to travel
  11. Comical (laughter is good for the soul dude try it sometime)
  12. Empathetic
  13. Compassionate
  14. Energetic (85-90% of the time)
  15. Independent (but I am a daddy’s girl so uh..I am spoiled hehe)
  16. Encouraging

Now that we got that out of the way! Let’s go to the Cons: Oh shoot shawty!

  1. Smart/Slick mouth (working on it..sort of)
  2. Can catch a attitude quickly ( and you can catch a fade!)
  3. Think that I am right about EVERYTHING
  4. Stubborn
  5. Can be lazy at times
  6. Cut people off (in a heart beat!)
  7. Can be unforgiving (takes me a long time!)
  8. Stuck up at times
  9. Be turned off easily (if you do something that don’t like make like C. Breezy and deuces)
  10. Facial expressions (they will tell you everything without me opening my mouth)
  11. If I don’t want to be bothered then don’t bother me.

Wow those cons were catching up! I mean I’m being real. Trust keeping one hundred is hard.  We all want to think that we’re perfect human beings. Despite my cons I will still date me! Shoot I would love to be around me.  We all have downfalls that we need to work on. The whole point of dating is compromising, communicating, trust, honesty and laughter. I mean it’s been a long, long, long, long, long (in my Gina voice) time since I dated someone. So, hey I’m down! But come correct though or you will be dismissed! Check out #2,9 and 10 again. Ha ha ha ha… no seriously.



Disney Villain Novels -Must have!

If you are a Disney lover like me then you will love these books that came out. Serena Valentino, the acclaimed comic book and novel writer came out with her best work yet. I have a weak spot for all the Disney Villains because they all have a story.  What made them evil? What made these Villains act the way that they do?  Each one of these Villains have a back story to why they turned out the way they did.

My family and friends know that I absolutely love the Snow Queen from Snow White.  Fairest of All: The story of the Wicked Queen was so good! As a matter of face after I read the book I felt sorry for her.  The Beast Within: The story of Belle’s Prince was great too. On the cool, I probably would not have stunted him.  I probably would have stuck with Gaston.  Poor Unfortunate Soul: A Tale of the Sea Witch was a page turner. Who knew Ursula was actually a good person? It’s just so sad how she decided to continue to be evil. Last but not least,  Mistress of All Evil: A Tale of the Dark Fairy.  This was the back story to Maleficent, whom I adore.  I was really rooting for her but, Maleficent had some haters! She was beautiful and very powerful and some of the other fairies couldn’t handle it.  It messed her up and she made up in her mind that she was going to be evil. 

All these so called villains had a choice to do right. From my perspective power can be very dangerous. Some powerful people are actually weak on the inside. These characters were also using magic so much that it actually became their crutch with the exception of the beast.  I not really saying much about the books because I will tell the stories! So go out and get those books!

Serena Valentino will be gracing us with another villain book in January 2018. I looked on her website and she didn’t say who.  I think it’s one of three characters. Cruella Deville, Captain Hook, or Jafar.  That would be awesome! Any who, check out those books. I guarantee that you will enjoy them!

Where has the time gone? WTH ( what the heck)am I doing?

Tick-tock goes the clock.  I remember I was so happy about turning thirty years old.  I went to Las Vegas with 3 of my great friends. We had a great time. That morning I woke up and I prayed for a very long time. I prayed to have a prosperous year and a few other things.  Then I look up and I’m turning thirty-one.  Okay..okay what the hay?  Really? How did it go by so fast? Where did the time go? Obviously, it went right before my eyes.   I wrote down a list at work ( when I was supposed to be working ha ha) and what I have accomplished the past year so let’s see!

  1. I paid off my car note! (Hallelujah! Won’t he do it!) I paid my last note in June. I was so happy!  Despite of me paying it off my car had a few mishaps. You know brakes needed to be fixed, dead battery and engine firing. You know what? I love my car! I love my white 2010 corolla. I brought that car straight out of college and I’m not letting it go yet!
  2.  My loans are half way paid for. Well a few of them. I’ve been consistently paying my loans.  I officially owe less than _________thousand dollars! lol
  3. I almost..ALMOST thought that I was going to be in some kind of relationship. Of course that didn’t last long! I don’t want to bring that up.   Read my three blogs C is for Chill S is for space. You’ll see the deal. To think I had prayed for a “man” on my thirtieth birthday! God had other plans for me. Can a girl dream though?
  4. On February I decided to get a gym membership and I’ve been going since.  I’ve been trying to take care of my body and eat more healthy. I ran into an old co-worker and now I have a gym buddy! I actually have a couple of gym buddies! It’s cool to know that I’m alone.
  5. My circle of friends is much smaller.  I remember when I was twenty-one I had lots of “friends”.  I can count on one hand who my real friends are. Guess what? I’m okay with that.
  6. I speak my mind more. I used to let people walk over me especially if I was intimidated. Now, I don’t care. I have no filter.  I really don’t care what people think of me. That goes back to number five.
  7. I  have new hobbies! (yay!) I really love to cook. I like to try out new dishes. I like to bake . It just relaxes me. I love to plan events for people. I love art. The hard thing about being creative is finding out what you can do. I’ve also been dipping and dabbing in writing a comedy sitcom. When you put your mind to never know!
  8. My make-up skills are much better! Honey when I tell you I can beat this mug! (Thanks to my mom.)  I’ve really invested in buying good quality makeup.  I don’t do my make-up every day. Oh but when I do, watch out now!
  9. The clothing and where I shop are much better! I’ve been gradually changing the way I dress. I dress my age. I can’t dress like an adolescent.  I need to dress like a grown woman.
  10.  I’ve managed to whip my 4c hair into submission (sort of ha ha) On the serious note I have been learning how to style my hair in different ways.  I love my natural hair!


So, there you have it. I pretty much have grown then. Lord knows I have a long way to go! All I can do is continue to grow and I find myself doing that everyday.

What is happening to our people? Organ trafficking Myth or Fact?

Something is strange going on in the black community. It is to my knowledge that lots of our brothers and sisters have been “disappearing”.  There was the case of the missing african american girls in D.C. and they were “found”.  Supposedly they were run aways and I didn’t believe that at all.

I started to do my research and came across organ trafficking.  That sparked something inside of me and I had to think back on Kendrick Johnson; the Georgia teenager found dead wrapped in a gym mat.   The surveillance shows him in the gym playing basketball but not the cause of death.  When his body is given to his parents it turns out his body was stuffed with news papers.

Micheal Brown was shot in the middle of the street in broad day light.  When his mother came to the scene she was not able to go near her son’s body.  They literally kept her from her son for hours until after the autopsy was done.

Sandra Bland was driving to Prairie View  Texas and she was pulled over by a policeman. She goes to jail and they find her body hanging from the ceiling.

Kenneka Jenkins is the latest mystery murder of all time.  The nineteen year old was at a hotel party and mysteriously found dead in the freezer with her top off. Once again, it shows that she was by herself you can clearly see that she was under the influence of something. She walks into the kitchen but it didn’t show her walk into the freezer.

The list goes on.

What all these young brother and sisters have in common is we really don’t know the real cause of their death and their parents were reframe from seeing their bodies after the fact. Some for days at a time.  That makes no sense.  What gives them the right to keep the body when the mother carried that child for nine months and raised them?

Why is that Kendrick’s body was stuffed with news paper and NO ONE knows anything?  Get out of here!  Why is that when a African-American person dies it’s not as bad as if someone else died? I get sick to my stomach when people say “Get over it”. ‘Things happen”. or my favorite. “They were at the wrong place at the wrong time”. I mean is there really such at being at the wrong place at the wrong time?

Trevon Martin was where he was supposed to be right? What’s wrong with walking to the store and getting snacks?  Kendrick Johnson was at school, that’s supposed to be a safe haven for your child.  Sandra Bland was taking the next step in her life driving to her new job.  Tamir Rice was just playing on the playground. Where children supposed to be.  Little boys have been playing with toy guns for a long time.  Keeneka was just being a typical nineteen year old.  Have we not done things at that age before?

I mean the list goes on and on. I can tell you right now these stories do not add up.

According to black america web 75, 000 black women and girls are missing across the country; where as 1.5 million african american males are missing.  Where are our people disappearing too?  And why isn’t the media putting this out for people to know about this? Why is that certain people get put on the back burner when it comes to things like this?

People have been taking African-American organs since slavery.  Word on the street is our organs are better. Especially younger people.

So is it a myth or fact?

Obviously it’s the truth because why would you stuff a body with news papers? Why keep that body for a long time?  Unless you are an organ donor then it stays in your body. When your body is autopsied the organs go back into your body.   That let’s me believe that their organs have been taken and sold illegally.   These good organs are being donated to the elite that can afford it. Not for the average joe.

Call me a conspiracy theorist but these people who have been gone missing will never be found. You know why? because they were set up in organ trafficking that’s why.  It would be a miracle if all of these people were found.  They were alive and well.  It would be nice to know that these people weren’t dead.   That’s not the case though.  It’s time to open our eyes and see the big picture.  These people need to be stopped and we need to take care of our people.
